I have to try these! My PB cookies never spread and I always have to press them down while they're still in the oven because they just continue to rise. It's so frustrating because I feel like I'm messing up the texture by pressing them down while they're still baking.

As for the flour thing, I used to go crazy thinking about how much flour I should actually be using. I normally go with whatever the author uses (if they list how much oz/g is in each cup). Mostly I just stick to 5oz of AP flour and 4oz of cake flour per cup if they don't say anything because it's on the higher end and I try to keep the flour to butter ratio as high as possible. It makes me feel like I'm cutting the fat down...the things I do to feel better about all the desserts I bake!

I'm so glad I stopped using cups and weigh everything now.. it definitely saved me from splurging on some really expensive measure cups!!

Love pics of stacked cookies, too. What is it about them? Maybe it's that kid thing. "These are all mine." Don't know--but really nice. As to measuring out the flour, you're dead on right. But I fear I'm lazy more often than not. Still, a scale is worth its weight in gold.
