My first batch is in the oven now.. My husband can not wait to try these! I had bought 2 boxes of the mints to bake the cookies with and needless to say the mints were found and GONE before the cookies were a thought! I am suprised that others are having trouble finding these.. They were a "staple" at Grandma's house in her fridge. (I'd always sneak one!) I find them in a SMALL box wrapped in Girl Scout mint green plastic packaging in the candy isle of my local grocery store chain, Jewel. It's also called Albertson's. There's about 4 ounces of candy total in the box. Thanks for posting such a great recipe.. I can't wait to taste these!

Alice: Unfortunately I've only been able to find Andes mints in Vancouver at Christmas time (at Shoppers Drug Mart, Michaels, Save on Foods). You can find them all year long in the States though.

Jessica: Interesting that they took so long! Mine were really soft when they came out at 10 minutes, so the final cookie is kind of brownie-ish.

Emily: I don't know if these would ship very well because they're meant to be a soft brownie-ish cookie. Personally I'd be scared of them drying out enroute, but then I'm very picky about dry cookies whereas lots of other people don't care. Maybe try another more sturdy chocolate cookie base, and do the melted Andes mint on top of that?

I made these cookies the other day! Absolutely delicious but took a lot longer to cook than 10 minutes. About 20 or so. Also good with a little powdered sugar before baking, crackles the cookie a bit. Thanks for the recipe!

oh. my. GOODESS. those Andes chocolate mint cookies are so GORGEOUS!! I love the swirl of the mint candy in the center of the cookies - and they have a brownie-like texture, eh? perfect!! :0)

Good job on the cookies. I didn't know that about Andes. There are some restaurants around here that give them out as you pay. I totally agree with you about there always being time for baking...it's such a good stress relief, isn't it!?
