Carrot Cake Oatmeal

I have always hated oatmeal. Hot mushy stuff? Gross. But for some reason when I saw it on Veggie Delights who adapted it from La Belle Vegan who (yes this is coming to an end) adapted it from Kath Eats, I was intrigued. So one night for dinner this is what I made. Have I changed my mind about oatmeal? Maybe slightly, since it was quite filling and is of course healthy. But for me the first few bites were exciting, and then it went back to that hot mushy stuff. Nevertheless, it's a really fun oatmeal recipe that I'm sure many other people would love.

Carrot Cake Oatmeal
Adapted from Kath Eats

Serves 1

1/2 cup rolled oats
1/2 cup soy milk
1/2 cup water
1/2 cup of grated carrot (I think this might've been 1 carrot?)
pinch of salt
1 tsp vanilla
1 tsp brown sugar
2 tbsp nonfat plain yogurt
1 tsp maple syrup
1 tbsp chopped pecans
1 tbsp shredded unsweetened coconut

Combine the rolled oats, soy milk, water, carrots and salt in a saucepan. Turn heat to medium and stir occasionally until mixture comes almost to a boil and most of the liquid is absorbed, which takes about 5-7 minutes. When oats are done, stir in vanilla and brown sugar.

While oats are cooking make "icing" by blending 2 tbsp of non-fat plain yogurt with 1 tsp maple syrup. Toast pecans in the toaster oven for a few minuteS (watch carefully).

Pour oats into a bowl and top with coconut, pecans and icing.

Oh! This sounds delicious. I'm one of those who loves oatmeal though...BUT I only like old-fashioned oats, won't touch the gross instant oatmeal. Whose idea was that?

Really can't wait to try this! Too bad I don't have any carrots...

I don't actually like carrot cake as it is known here in the North Americas...Too much frosting, too little carrots.... However, this oatmeal sounds like it's not too sweet. I like the idea. Thanks for sharing!

That' so cool! I can't wait to make this for my baby brother, who must be getting tired of the usual brown sugar/honey & cinnamon variety.

So I can pretend I'm having cake for breakfast, not overloading my system with all the wrong stuff and have oatmeal at the same time. Ok, I'm in.

What a unique way to start the day. My dad had oatmeal every morning of his life until my parents started the Fit for Life Diet 15 years ago...now he has it for lunch instead:D

This was really good. A bit of sugar overload for breakfast though - I couldn't quite finish my bowl! That's my fault, I added too much brown sugar, I think.

I think the amt of liquid in this recipe makes it especially mushy (when I make carrot cake I drain the carrots bc of the moisture content). I usually like a lot of texture (less mush) to my oatmeal...maybe oatmeal would be yummier if you added a little less liquid? Sorry, I'm acting pushy! Just trying to convert you to the dark side where oatmeal is delicious! :)

I'm with you on oatmeal being yucky hot mushy stuff. Yuckos. But yours look very enticing, I must say!

On another note altogether, I have an award waiting for you at my blog :)

I've never been an oatmeal fan, either (unless it's cookies!!) so maybe I need to try this and see if it changes my opinion!

How fun! Definitely a fun way to spice up a breakfast. As a kiddo, I wasn't much of an oatmeal fan, but if THIS was served, there wouldn't have been any hesitation at the breakfast table :).

I have been experimenting with grated carrots in oatmeal and waffles recently. Raisins and cinnamon are good additions. Dessert in disguise!

I made this this morning and it was quite yummy! I cannot for the life of me, nor could my husband, get my new bottle of maple syrup open, so I used a little honey. I added a sprinkle of cinnamon. I also put in about 2 inches of thinly sliced banana. Yum.

I made some alterations... By the time I was done, it wasn't actually carrot cake oatmeal anymore, but I thought I'd comment anyway, because without your base recipe posted here, I don't think I could have done so well. ;)

I doubled the recipe, since there are two of us that wanted breakfast. Instead of carrot, I used apple. (I had some apples I needed to use up.) I used Skim Rich milk (I'm not vegan and it's what I had on hand).

The major addition was during the addition of vanilla and brown sugar, I added 1/2 teaspoon cinnamon and 1/4 teaspoon ground ginger. For the doubled batch, it probably could have used slightly more.

I left out the coconut. (I just didn't have any on hand.)

As for the recipe lacking sweetness for you, did you pack your brown sugar? I'll admit my teaspoon may have been slightly more than a teaspoon. :D

cabernet: Mmm the addition of cinnamon and ginger sounds delicious! I think I added more sugar (more maple syrup) than I was supposed to. Next time I might need more brown sugar like you. ;)
